Chickpea Tacos

If you’re like me, you most likely get home from work relatively late in the evening where the idea of spending 1+ hours cooking dinner is not appealing at all.  You also most likely do not wish to visit a fast-food joint.  So for you, I give you this quick and tasty recipe for Chickpea Tacos.

Mexican food is probably one of my favorites.  The flavors, the colour, not to mention the overwhelming excuse to eat guacamole.  Mexican food is plain awesome and so are these tacos.

Chickpea Tacos

1 can Chickpeas, drained and rinsed

1 tbsp chopped jalapenos (I used jarred)

1 tbsp vegetable oil

Juice from ½ a lemon

½ tsp smoked paprika

¼ tsp chili powder

¼ tsp garlic powder

¼ tsp ground coriander

¼ tsp sea salt

Dash of black powder

1 small can of corn


In a medium bowl combine chickpeas with spices, lemon juice, and jalapenos; stir well to combine.  Heat oil over medium-high heat in a large pan then add chickpea mixture and corn.  Cook for about 7-10 minutes and top onto whole wheat tortillas with guacamole and salsa.  Serve with veggies.

Simple Guacamole

1 avocado

Juice from ½ a lemon

1 tsp herbamare seasoning


Mix all ingredients together, serve with chickpea tacos.
