Kale cravings

Tonight’s dinner featured two of my favorite things: Kale and Hummus.  I was seriously craving Kale today post interval training, and when I get a craving I’m rarely one to ignore it.

It’s normal to crave Kale, right?

Short and sweet, this was the perfect week night meal: quick, easy, healthy and filling.  Instead of my traditional hummus I decided to go for a jalapeno flavor.  Subbing the lemon juice and tahini for lime juice and jalapeno’s make for a superb dip- trust me!

As for the kale, I decided to go with the raw and massaged version including a plethora of colourful veggies and lemony dressing.

Pure. Heaven.

Jalapeno Hummus

1 can Chickpeas, drained and rinsed

2 tbsp lime juice

1 tbsp olive oil

2 tbsp minced jalapenos (I used the jarred variety)

1 clove of garlic finely chopped

¼ tsp sea salt

¼ tsp cumin seeds


Combine all the ingredients into the food processor, pulse and scrape until smooth.  Serve with pita bread cut into wedges.

Raw Kale Salad

1 bunch of kale

Juice from 1 lemon

¼ c. olive oil

¼ tsp sea salt

1 tsp Dijon mustard

2 c. assorted vegetables (make it colourful)


Remove the Kale leaves from the large stems and tear into bite sized pieces.  Rinse well and dry thoroughly.

Mix oil, lemon juice, salt and mustard into a small bowl.  Whisk until well combined. Pour over kale and gently massage until the leaves are completely coated and have turned a bright green (about 5 minutes).  Toss in vegetables and serve.
